The key is balancing sweetness with lemon and using a touch of cornstarch so the juices set instead of flooding the pan.

## Ingredients

### Blueberry Filling

- 6 cups blueberries (about 2 1/2 pints; fresh preferred, or frozen—do not thaw)

- 1 tbsp fresh lemon juice
- 1 tsp finely grated lemon zest
- 1/2 tsp ground cinnamon (optional, but classic)

- 1 tsp vanilla extract
- 1 tbsp unsalted butter, cut into small pieces

### Biscuit Cobbler Topping

- 1 1/2 cups all-purpose flour
- 1/3 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp kosher salt
- 6 tbsp cold unsalted butter, cut into small cubes
- 2/3 cup whole milk (or buttermilk for extra tang)
- 1 tsp vanilla extract

### For Finishing (Optional but Recommended)

- 1 tbsp coarse sugar (turbinado or sanding sugar), for sprinkling
- Vanilla ice cream or lightly sweetened whipped cream, for serving

## Instructions

1. Heat the oven to 375°F. Lightly butter a 9-inch square baking dish (or a 2-quart dish). Place the dish on a rimmed baking sheet to catch any bubbling juices.

2. Make the filling: In a large bowl, toss blueberries with sugar, cornstarch, lemon juice, lemon zest, cinnamon (if using), and salt until the cornstarch disappears. Stir in vanilla. Scrape into the baking dish and dot the top with the 1 tbsp butter.

3. Start the fruit baking: Bake for 10 minutes to jump-start the juices and thickening while you make the topping.

4. Make the topping: In a medium bowl, whisk flour, sugar, baking powder, and salt. Cut in the cold butter with a pastry cutter or fingertips until the mixture looks like coarse crumbs with a few pea-size pieces.

5. Add liquids: Stir in milk and vanilla just until a shaggy dough forms. Do not overmix; a few floury streaks are fine.

6. Top the cobbler: Remove the hot dish from the oven. Drop the dough over the blueberries in 8–10 rough mounds (a cobbler should look “cobbled,” not perfectly smooth). Sprinkle with coarse sugar if using.

7. Bake until bubbling and golden: Return to the oven and bake 30–35 minutes, or until the filling is vigorously bubbling at the edges and the topping is deeply golden. If the top browns too quickly, loosely tent with foil for the last 10 minutes.

8. Rest to set: Cool 20–30 minutes before serving. This rest time lets the cornstarch finish setting so the cobbler slices more cleanly.

9. Serve warm with vanilla ice cream or whipped cream.
