Chili cheese fries are a perfect snapshot of American comfort food: crunchy, saucy, and unapologetically generous. This version leans on a straightforward stovetop chili and oven-baked fries so you can control the salt, spice, and melt. The key is layering—hot fries, hot chili, and freshly shredded cheese—so every bite stays crisp and gooey.

## Ingredients

### For the fries

- 2 lb russet potatoes (about 4 large), scrubbed
- 2 1/2 tbsp neutral oil (canola, vegetable, or avocado)
- 1 tsp kosher salt, plus more to taste
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika (optional but recommended)
- Freshly ground black pepper, to taste

### For the chili

- 1 tbsp neutral oil
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 lb ground beef (80/20 preferred)
- 2 tbsp tomato paste
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- 1/2 tsp kosher salt, plus more to taste
- 1/4 tsp black pepper
- 1 (14.5 oz) can crushed tomatoes or tomato sauce
- 1 cup beef broth (or water)
- 1 tsp Worcestershire sauce
- 1 tsp apple cider vinegar (optional, to brighten)
- Pinch of cayenne or hot sauce, to taste (optional)

### For topping and serving

- 2 1/2 cups shredded cheddar-jack blend (or sharp cheddar), freshly shredded
- 2 green onions, thinly sliced (optional)
- Pickled jalapeños, for serving (optional)
- Sour cream, for serving (optional)

## Instructions

1. Heat the oven to 450°F. Set a large rimmed baking sheet in the oven while it heats (a hot pan helps the fries crisp).

2. Cut the potatoes into 1/4- to 3/8-inch sticks. Rinse under cold water until the water runs mostly clear, then pat very dry with towels (dry potatoes = crispier fries).

3. Toss potatoes with oil, salt, garlic powder, paprika (if using), and pepper. Carefully remove the hot baking sheet, spread fries in an even layer (avoid crowding), and return to the oven.

4. Bake 20 minutes, flip, then bake 15–20 minutes more until deeply golden and crisp. If your pan is crowded, rotate the tray halfway through.

5. While the fries bake, make the chili: Heat 1 tbsp oil in a medium pot over medium heat. Add onion and cook 4–5 minutes until softened. Add garlic and cook 30 seconds.

6. Add ground beef, breaking it up with a spoon. Cook 6–8 minutes until browned; drain excess fat if needed.

7. Stir in tomato paste, chili powder, cumin, oregano, salt, and pepper. Cook 1 minute to bloom the spices.

8. Add crushed tomatoes, broth, and Worcestershire. Bring to a simmer, then reduce heat to low and simmer 10–15 minutes, stirring occasionally, until thick enough to spoon (not watery). Stir in vinegar and cayenne/hot sauce if using; adjust salt to taste.

9. Assemble: Pile hot fries on the baking sheet or a platter. Spoon hot chili evenly over the fries, then immediately scatter cheese over the top.

10. Melt the cheese: Return the tray to the oven for 3–5 minutes, just until the cheese is melted and bubbling (or broil 1–2 minutes, watching closely).

11. Finish with green onions and any optional toppings. Serve right away while the fries are crisp.
