Grandma’s beef stew wasn’t fancy, but it was always deeply satisfying—built on patience, good browning, and a pot that gently simmered until the meat surrendered. The secret is treating stew like a braise: sear hard, deglaze well, then cook low and slow. This version keeps the flavors classic and the technique clear, so you can repeat it confidently anytime the weather turns cool.

## Ingredients

### Beef and aromatics

- 2 1/2 lb beef chuck roast, cut into 1 1/2-inch chunks
- 2 tsp kosher salt, plus more to taste
- 1 tsp freshly ground black pepper
- 3 tbsp all-purpose flour
- 2–3 tbsp neutral oil (vegetable or canola), as needed
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 2 tbsp tomato paste

### Liquids and seasonings

- 1 cup dry red wine (optional) or additional beef broth
- 4 cups low-sodium beef broth
- 1 tbsp Worcestershire sauce
- 2 bay leaves
- 1 tsp dried thyme (or 2 tsp fresh thyme leaves)

### Vegetables

- 4 medium carrots, peeled and cut into 1-inch chunks
- 3 ribs celery, cut into 1/2-inch pieces
- 1 1/2 lb Yukon Gold potatoes, cut into 1 1/2-inch chunks
- 8 oz cremini mushrooms, halved (optional but classic)
- 1 cup frozen peas (optional, for the last few minutes)

### Finish

- 1 tbsp cornstarch mixed with 2 tbsp cold water (optional, for thickening)
- 1–2 tbsp chopped fresh parsley (optional)

## Instructions

1. Pat the beef dry (this helps it brown). Season with salt and pepper, then toss with the flour to lightly coat.

2. Heat 2 tbsp oil in a large Dutch oven over medium-high heat. Brown the beef in batches in a single layer, 3–4 minutes per side, adding a little more oil if the pot looks dry. Transfer browned beef to a plate.

3. Reduce heat to medium. Add onion and celery to the pot and cook 5–7 minutes, scraping up browned bits, until softened. Add garlic and cook 30 seconds.

4. Stir in tomato paste and cook 1–2 minutes until it darkens slightly (this deepens flavor).

5. Deglaze with wine (or a splash of broth), scraping the bottom of the pot to dissolve the fond. Simmer 2 minutes.

6. Return beef (and any juices) to the pot. Add beef broth, Worcestershire, bay leaves, and thyme. Bring to a gentle boil, then reduce to a low simmer, cover, and cook 1 hour.

7. Add carrots, potatoes, and mushrooms (if using). Cover and simmer 45–60 minutes more, stirring occasionally, until the beef is fork-tender and the potatoes are cooked through.

8. Taste and adjust seasoning with salt and pepper. If you want a thicker gravy, stir in the cornstarch slurry and simmer 2–3 minutes until glossy and slightly thickened.

9. If using peas, stir them in and simmer 2–3 minutes. Remove bay leaves, sprinkle with parsley if desired, and serve hot.
