- •1 tsp freshly ground black pepper
- •1 tbsp neutral oil (optional, for skillet cooking)

- •2 tbsp unsalted butter, softened (for toasting buns)
- •1/4 cup yellow mustard, plus more to taste

Form the patties: Divide beef into 4 equal portions (about 6 oz / 170 g each). Gently shape into patties about 3/4-inch thick and slightly wider than the buns. Press a shallow dimple in the center of each patty to help it cook flat.

Season just before cooking: Sprinkle both sides of each patty evenly with the salt and pepper.

Cook the patties: Place patties on the grill or in the hot skillet. Cook 3–4 minutes, until a deep brown crust forms. Flip once and cook 2–4 minutes more for medium (about 160°F / 71°C for food-safe doneness). Do not press down on the patties.
