# Classic Hamburgers with Pickles and Mustard

A true American diner-style hamburger: juicy beef patties seared hot, tucked into toasted buns, and finished with yellow mustard and crisp dill pickles. This recipe focuses on simple technique—proper seasoning, a hot pan or grill, and minimal handling—for a classic, reliable result.

Classic American hamburgers don’t need complicated add-ins; they need good beef, high heat, and restraint. In this version, mustard and pickles do the heavy lifting, cutting through richness with tang and crunch. Once you learn the timing and the “don’t press the patty” rule, you can replicate that nostalgic roadside-stand flavor at home.

## Ingredients

### Burger Patties

- 1 1/2 lb (680 g) ground beef, 80/20 preferred
- 1 1/2 tsp kosher salt
- 1 tsp freshly ground black pepper
- 1 tbsp neutral oil (optional, for skillet cooking)

### Buns & Toppings

- 4 hamburger buns (sesame or classic soft buns)
- 2 tbsp unsalted butter, softened (for toasting buns)
- 1/4 cup yellow mustard, plus more to taste
- 12–16 dill pickle chips (or 4 dill pickle spears, sliced lengthwise)
- Optional: 4 slices American cheese
- Optional: thinly sliced onion and tomato, shredded iceberg lettuce

## Instructions

1. Preheat a grill to high heat (about 450–500°F / 230–260°C) or heat a cast-iron skillet over medium-high until very hot. If using a skillet, add the oil only if the pan is dry.

2. Form the patties: Divide beef into 4 equal portions (about 6 oz / 170 g each). Gently shape into patties about 3/4-inch thick and slightly wider than the buns. Press a shallow dimple in the center of each patty to help it cook flat.

3. Season just before cooking: Sprinkle both sides of each patty evenly with the salt and pepper.

4. Cook the patties: Place patties on the grill or in the hot skillet. Cook 3–4 minutes, until a deep brown crust forms. Flip once and cook 2–4 minutes more for medium (about 160°F / 71°C for food-safe doneness). Do not press down on the patties.

5. Optional cheese: If using American cheese, add a slice to each patty during the last minute of cooking and cover briefly (close grill lid or tent skillet with a lid) to melt.

6. Toast the buns: Spread cut sides of buns with butter and toast on the grill or in a skillet until golden, 30–90 seconds.

7. Assemble: Spread mustard on the bottom bun, add the patty, then top with pickle chips (and any optional toppings). Close with the top bun and serve immediately.
