Diner cheeseburgers aren’t about thick steakhouse patties—they’re about speed, heat, and the magic of a flat top. By pressing thin patties on a ripping-hot skillet, you maximize browning and build a crisp edge while keeping the center juicy. ## Ingredients

### Burger Sauce

- 1/3 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 2 tbsp dill pickle relish (or finely chopped dill pickles)
- 1 tsp white vinegar (or pickle brine)
- 1/2 tsp smoked paprika (optional)
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Pinch of kosher salt and black pepper

### Burgers

- 1 1/2 lb ground beef (80/20 recommended)
- Kosher salt and freshly ground black pepper
- 1 tbsp neutral oil (canola/vegetable), for the pan
- 8 slices American cheese
- 4 soft burger buns (potato or classic sesame)
- 2 tbsp unsalted butter, softened (for toasting buns)

### Toppings (Classic Diner Set)

- Dill pickle chips
- Thinly sliced white onion (optional)
- Shredded iceberg lettuce (optional)
- Tomato slices (optional)

## Instructions

1. Make the burger sauce: In a small bowl, stir together mayonnaise, ketchup, mustard, relish, vinegar, paprika (if using), garlic powder, onion powder, salt, and pepper. Refrigerate while you cook (even 10 minutes helps).

2. Portion the beef: Divide ground beef into 8 equal balls (about 3 oz each). Keep them loosely packed—don’t overwork the meat.

3. Toast the buns: Lightly butter the cut sides of the buns. Toast cut-side down on a skillet or griddle over medium heat until golden. Set aside.

4. Preheat the cooking surface: Heat a large cast-iron skillet or flat griddle over medium-high to high heat until very hot (a drop of water should sizzle and skate). Add oil and swirl to coat lightly.

5. Smash and sear: Place 2–4 beef balls on the hot surface (work in batches if needed). Immediately smash each into a thin patty (about 1/4-inch) using a sturdy spatula; for best results, press with a second spatula or use parchment between the meat and spatula. Season generously with salt and pepper.

6. Cook first side: Let patties cook undisturbed 60–90 seconds until deep brown and crisp at the edges.

7. Flip and add cheese: Scrape and flip each patty (get under the crust). Immediately top each patty with a slice of American cheese. Cook 45–60 seconds more.

8. Diner-style melt: Add a teaspoon of water to the pan (away from the patties) and cover for 15–30 seconds to steam-melt the cheese.

9. Stack doubles: For each burger, stack two cheesy patties together.

10. Assemble: Spread burger sauce on the bottom bun (and top bun if you like). Add pickles and onion (and lettuce/tomato if using). Set the double patty stack on the bottom bun and cap with the top bun.

11. Serve immediately: Diner-style burgers are best hot off the griddle while the edges are crisp and the cheese is fully melted.
