    Crack the eggs into a medium bowl. Add the salt, pepper, and milk or half-and-half (if using). Whisk vigorously for 20–30 seconds until the mixture looks uniform and slightly foamy—this helps create lighter curds.

    Place a nonstick skillet (8–10 inches) over low to medium-low heat. Add 1 1/2 tablespoons of the butter and let it melt slowly, coating the pan without browning.

    Pour in the eggs. Let them sit undisturbed for about 10–15 seconds, just until the edges begin to thicken.

    Using a silicone spatula, gently push the eggs from the edges toward the center, sweeping the pan in slow strokes. Continue stirring and folding slowly, keeping the heat low; you’re aiming for soft curds, not fast scrambling.
