Mozzarella sticks are a beloved American appetizer because they balance crunch, salt, and gooey cheese in one bite. The key is a firm freeze and a well-seasoned breading so the cheese stays put while the coating turns deeply crisp. This version includes a quick marinara that tastes slow-simmered thanks to a few smart pantry techniques.

## Ingredients

### Mozzarella Sticks

- 16 oz low-moisture mozzarella string cheese (about 12 sticks), cut in half crosswise for shorter sticks (optional)
- 1 cup all-purpose flour
- 2 large eggs
- 2 tbsp water
- 2 cups Italian-style breadcrumbs
- 1/2 cup panko breadcrumbs
- 1 tsp kosher salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp smoked paprika (optional)
- 1/4 tsp black pepper
- Neutral oil for frying (canola, vegetable, or peanut), about 4 cups for a Dutch oven or deep skillet

### Quick Marinara

- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1 tbsp tomato paste
- 1 tsp kosher salt, plus more to taste
- 1 tsp sugar (optional, to balance acidity)
- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes (optional)
- 1 tbsp chopped fresh basil or parsley (optional)

## Instructions

1. Freeze the cheese: Unwrap the mozzarella sticks and place on a parchment-lined tray. Freeze until very firm, at least 1 hour (2 hours is even better). This is the main defense against blowouts.

2. Make the marinara: In a small saucepan over medium heat, warm olive oil. Add garlic and cook 30–45 seconds until fragrant (don’t brown). Stir in crushed tomatoes and tomato paste, then add salt, sugar (if using), oregano, and red pepper flakes (if using). Simmer 10–15 minutes, stirring occasionally. Taste and adjust salt; finish with basil/parsley if desired. Keep warm.

3. Set up a breading station: In a shallow bowl, add flour. In a second bowl, whisk eggs with water. In a third bowl, combine Italian breadcrumbs, panko, salt, garlic powder, onion powder, oregano, basil, smoked paprika (if using), and black pepper.

4. Bread the sticks (double-coat for security): Working with a few frozen sticks at a time, coat in flour (tap off excess), dip in egg, then press into breadcrumb mixture to fully cover. Dip back into egg and coat in breadcrumbs again, pressing firmly. Return to the tray.

5. Freeze again: Freeze the breaded sticks for 20–30 minutes while you heat the oil. This second chill helps the coating set and reduces cheese leakage.

6. Heat the oil: In a heavy pot or deep skillet, heat 1 1/2–2 inches of neutral oil to 350°F (175°C). Maintain temperature between 340–360°F for consistent browning.

7. Fry in batches: Fry 4–6 sticks at a time for 60–90 seconds, turning gently, until deep golden. If you see a small cheese leak, remove that stick promptly—overfrying increases blowouts.

8. Drain and season: Transfer to a wire rack or paper towels. Lightly salt while hot if desired. Let rest 1–2 minutes so the cheese sets slightly.

9. Serve: Serve mozzarella sticks hot with warm marinara for dipping.
