  • 1 cup dried green or brown lentils, rinsed

  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14½ oz) diced tomatoes, with juices
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon cumin
  • Salt and pepper to taste
