# Mrs. Guppy's Molasses Cake

An old favourite, very moist, tasty cake.

## Ingredients

- cup butter
- cup sugar
- cup molasses
- 2.0 eggs
- 2.0 teaspoons baking soda
- 3.5 cups flour
- cup coffee
- 0.5 cup milk
- teaspoon vanilla extract
- pound raisins
- pound currants
- teaspoon cinnamon
- teaspoon cocoa
- teaspoon spice
- 0.5 teaspoon cloves
- 0.25 teaspoon mace
- 0.25 teaspoon salt

## Instructions

1. Butter and flour large tube pan.  You may line the bottom of pan with wax paper if desired.

2. Cream butter, gradually cream in sugar, then add eggs.

3. Combine wet ingredients, molasses, coffee, milk and vanilla in jug or 4-cup measure.

4. Combine dry ingredients, flour, cocoa, soda and spices in separate bowl.

5. Alternately add dry, then wet ingredients to creamed mixture, blending well after each addition, using up 1/3 of each at a time.

6. Finally, stir in combined raisins and currants which have been lightly floured.

7. Pour into tube pan and bake for 2 - 2.5 hours at 300°F.
