Chicken
- •3 lb (about 1.4 kg) boneless, skinless chicken breasts (or a mix of breasts and thighs)
Cooking liquid + flavor base
- •1 cup (240 ml) low-sodium chicken broth
- •2 tbsp tomato paste (optional, for a little body and color)
- •2 tbsp apple cider vinegar or fresh lemon juice
Seasoning
- •2 tsp kosher salt (use 1 1/2 tsp if using regular table salt)
- •2 tsp garlic powder
- •2 tsp onion powder
- •1 1/2 tsp smoked paprika
- •1 tsp ground black pepper
- •1 tsp dried oregano
- •Pinch of chili flakes or cayenne (optional)

Add chicken to the slow cooker in an even layer.

In a bowl, whisk together broth, tomato paste (if using), and vinegar/lemon. Pour over the chicken.

Sprinkle salt, garlic powder, onion powder, paprika, pepper, oregano, and chili flakes (if using) evenly over the top.

Cover and cook until the chicken is very tender: LOW for 4–5 hours or HIGH for 2–3 hours. (Cook time varies by slow cooker; aim for chicken that shreds easily.)

Transfer chicken to a large bowl and shred with two forks.

Return shredded chicken to the slow cooker and toss with the cooking liquid to re-moisten. If you want it a bit richer, stir in 1–2 tbsp olive oil.
