# 20-Minute Creamy Tuscan Chicken

This is the kind of dinner that saves a weeknight: quick, cozy, and made with ingredients that feel a little special without extra work. Everything happens in one skillet, so cleanup stays easy. Serve it over pasta, rice, or with crusty bread to soak up every bit of that creamy sauce.

## Ingredients

### Chicken

- 1 1/2 lb boneless, skinless chicken breasts (about 3 medium), sliced horizontally into cutlets
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp Italian seasoning
- 2 tbsp all-purpose flour (optional, for light dredging)

### Sauce & Add-Ins

- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 3 cloves garlic, minced
- 1/3 cup sun-dried tomatoes (oil-packed), drained and sliced
- 1 cup low-sodium chicken broth
- 3/4 cup heavy cream
- 1/2 cup finely grated Parmesan cheese
- 3 cups baby spinach
- 1 tsp lemon juice (optional, to brighten)

### To Serve (Optional)

- Cooked pasta, rice, or mashed potatoes
- Chopped basil or parsley

## Instructions

1. Pat chicken dry. Season both sides with salt, pepper, and Italian seasoning. If using flour, lightly dredge the cutlets and shake off excess.

2. Heat olive oil and butter in a large skillet over medium-high heat. Add chicken in a single layer and cook until golden and cooked through, 3–4 minutes per side (work in batches if needed). Transfer to a plate.

3. Reduce heat to medium. Add garlic and cook until fragrant, about 30 seconds. Stir in sun-dried tomatoes.

4. Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Simmer 1–2 minutes.

5. Stir in heavy cream, then whisk in Parmesan until smooth. Simmer 2–3 minutes, stirring, until the sauce thickens slightly.

6. Add spinach and stir until just wilted, about 1 minute. Taste and adjust seasoning; stir in lemon juice if using.

7. Return chicken (and any juices) to the skillet and spoon sauce over top. Simmer 1 minute to warm through. Serve right away over pasta, rice, or potatoes, with herbs if you like.
