  • 14 oz smoked sausage (kielbasa or andouille), sliced into 1/2-inch coins
  • 1 lb baby potatoes, halved (or quartered if large)
  • 1 large bell pepper (any color), cut into 1-inch pieces
  • 1 medium red onion, cut into wedges
  • 2 cups broccoli florets (or green beans)

Seasoning

  • 3 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 3/4 tsp kosher salt (use 1/2 tsp if your sausage is very salty)
  • 1/2 tsp black pepper
  • 2 cloves garlic, minced

To finish (optional but great)

  • 1 tbsp lemon juice
  • 2 tbsp chopped fresh parsley
  • Grated Parmesan, for serving

    Heat the oven to 425°F. Line a large sheet pan with parchment or foil for easy cleanup.

    In a large bowl, toss the potatoes with 1 1/2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper. Spread potatoes on the sheet pan in an even layer. Roast for 10 minutes to give them a head start.

    Meanwhile, in the same bowl, toss the sausage, bell pepper, onion, and broccoli with the remaining 1 1/2 tbsp olive oil, Italian seasoning, smoked paprika, garlic, remaining salt, and remaining pepper.

    Carefully remove the pan from the oven. Add the sausage and veggies to the pan with the potatoes, spreading everything into a single layer.

    Roast for 12–15 minutes, stirring once halfway through, until the potatoes are tender, the veggies are browned at the edges, and the sausage is hot.

    If you want extra browning, broil for 1–2 minutes at the end (watch closely).

    Finish with lemon juice and parsley if using. Serve as-is or top with Parmesan.
