Ingredients

Chicken

  • 1 1/2 lb thin-sliced chicken cutlets (about 6 cutlets)
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil

Coating

  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tbsp water
  • 1 cup Italian-style breadcrumbs (or panko)
  • 1/3 cup finely grated Parmesan cheese
  • 1/2 tsp garlic powder

Sauce & Cheese

  • 1 1/2 cups marinara sauce (store-bought is perfect)
  • 1 1/2 cups shredded mozzarella (or 6 slices)
  • 2 tbsp chopped fresh basil or parsley (optional)

For serving (optional)

  • Cooked spaghetti or your favorite pasta
  • Extra marinara, warmed

    Set an oven rack about 6 inches from the broiler and preheat the broiler. Line a sheet pan with foil for easy cleanup.
